In the modern world in which we in Western societies live, certain skills have been all but lost; one of these is knife sharpening. I’m an above average “handy-man”; I’ve actually built my own house. I also build furniture—everything from kitchen cabinets to one of my most challenging projects, rocking chairs, one each for my three daughters. I say this, but I do not exclude myself from this “merry band of brothers” a.k.a. skill-less when it comes to knife sharpening; I’m right there with you! Some people succeed at getting a reasonably sharp edge on a knife but have trouble taking it to the next level where it is truly razor-sharp and where it will keep its edge for an extended time. This is terribly frustrating! So, what do we do with a dull knife? Most of us just hack our way through our next slicing assignment or have our families buy us a new knife for our birthday. For this very reason, the average home has multiple sets of knives and “one-of’s.” Case in point; my home has four knife sets and more than a dozen individual “one- of’s” knives.
